“Only boring people are bored” – Betty Francis/Draper

Perhaps the most polarizing character on Mad Men, Betty is hard to like. She is a distant, sometimes abusive, mother, a childish spouse, and a generally unpleasant person. She is also delicate and troubled. And beautiful.

Could January Jones be any more gorgeous? The answer is no, no she could’t.

To celebrate this interesting figure, I went with her namesake: Apple Brown Betty. I added cranberries, since she is such a sourpuss, which add a nice tartness to balance the copious amount of brown sugar in this recipe.

Apple Brown Betty Draper

Technically, it should be Apple Brown Betty Francis, but it doesn’t have the same ring to it. She will always be Betty Draper to me!

Adapted from the one, the only Pioneer Woman

  • 3 Granny Smith Apples, peeled and thinly sliced
  • 1 teaspoon of cinnamon
  • 7 slices of whole wheat sandwich bread (or whatever you have on hand), diced into small pieces
  • 1/2 cup salted butter
  • 1 1/2 cups of brown sugar
  • 1/2 cup dried cranberries
  • A couple tablespoons of water

1. Preheat your oven to 375 degrees. Assemble your sliced and diced apples and bread.

2. Toss apples with cinnamon. The original recipe doesn’t call for cinnamon, but after a trip to this place:

I couldn’t resist!

3. Grease a pie plate or small baking dish with lots o’ butter. Add a third of the brown sugar, followed by a third of the apples, a third of the cranberries, and a third of the bread cubes. Repeat, ending with the bread cubes.

4. Slice up the remaining butter and add pats on top of the bread cubes. Sprinkle with a couple tablespoons of water, a little bit more brown sugar, cover with foil, and bake for about 45 minutes. For a crispier crunch, remove the foil at 40-42 minutes for additional browning.

Oh no, I didn’t! I have seen her in a couple interviews and she seems…a lot like Betty :)

perhaps a shot of grand marnier and light it just before serving . . .never a dull moment.
