If I had to sum up this popcorn in one word it would be…

ADDICTIVE.

I’ve been making this caramel popcorn for years – it is so easy to make your own and homemade tastes much better than store-bought! But, when you up the salt and add in some warm pumpkin spices, well, then you’ve got a truly addictive snack on your hands! This popcorn can tame any sweet/salty craving!

Pumpkin Spice Salted Caramel Corn

Ingredients
  • 1 regular sized bag of popped popcorn (no or low butter works best – or pop your own!)
  • 1 cup brown sugar
  • ¼ cup light corn syrup
  • 1½ teaspoon salt
  • ½ cup butter
  • ¼ teaspoon baking soda
  • ½ teaspoon vanilla
  • ½ teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • ¼ teaspoon ginger
  • ⅛ teaspoon cloves
  • ⅛ teaspoon allspice
Instructions
  1. Preheat oven to 250 degrees. Place popcorn in a roasting pan (I like to use disposable pans for this recipe).
  2. Mix together the brown sugar, corn syrup, butter, and salt in a medium saucepan over medium heat. Bring to a boil over medium heat, and boil for 5 minutes, stirring constantly.
  3. Remove caramel from heat. Immediately stir in baking soda, vanilla, and spices. Pour over popcorn, stirring gently to coat.
  4. Bake for one hour, stirring every 15 minutes.

Looks so yummy…that I’m craving popcorn for breakfast! Popped some a few days ago to munch on as I haven’t had popcorn since last Christmas. I’m not supposed to eat grains, but…hey, I’m saying it’s the holidays…so I can, right? ;) Your caramel popcorn is going right on my list to make soon! Thanks for sharing, girl!

I made caramelized gingerbread popcorn last year, I ate one sheet … on the spot..and it wasn’t even out of the oven. I love addition of vanilla.

I have a houseful of pumpkin spice addicts that I am going to make very happy with this popcorn. We all cook together on Thanksgiving day and snacks and munchables are consumed throughout (Sometimes we aren’t hungry for the dinner we have spent all day cooking!) This is lighter than a baked good but satisfies the sweet tooth. :) Question: have you ever had any left over to be able to say if it stays crunchy for a day or two, or do you really need to eat it the day it is made?

Hi Wendy! I think it is best within 1-2 days of making it (though, it is normally gone the same day in my house! ;) But, you can keep it in an airtight container for up to a week just fine!
