Snickerdoodle Cookie Dough Ice Cream

  • Cookie Dough Pieces
  • ½ cup unsalted butter, room temperature
  • ¾ cup white sugar
  • 1 teaspoon vanilla
  • ½ teaspoon salt
  • 1 teaspoon cinnamon
  • 1⅓ cups flour
  • 1-3 tablespoons milk
  • Ice Cream
  • 2 cups heavy whipping cream, chilled
  • 14 ounces sweetened condensed milk
  • 1 teaspoon cinnamon
Instructions
  1. Cookie Dough Pieces. Cream together the butter, white sugar, and vanilla. Add in the flour, salt, and cinnamon and mix until well-combined. Add 1-3 tablespoons of milk to achieve a cookie dough consistency. Place small chunks of cookie dough on a parchment paper lined baking sheet. Place in freezer for 10-15 minutes.
  2. Ice Cream: Beat 2 cups of heavy cream until stiff peaks form. Set aside. In a large bowl, combine the 14 ounces of sweetened condensed milk and 1 teaspoon cinnamon. Fold in the whipped heavy cream until no white streaks remain. Gently stir in frozen chunks of cookie dough.
  3. Place in covered container and freeze overnight (or at least 6 hours).
